Sake Mojito

1/2 of a lime, cut into pieces
3/4 simple syrup
4 leaves of mint (plus mint for garnishing)
1.5 Oz sake
1 Oz Plantation 3 Star Rum

Combine ingredients in a shaker and shake hard with ice for 10-15 seconds. Double strain into a highball glass with fresh ice and top with soda water. Gently stir, and garnish with a large sprig of mint. Add a straw and enjoy!
