Seasonal Fall/Winter class 2023/2024

A vanilla and kiwi egg white sour that goes down easy….at the same time sophisticated and elegant, nostalgic and new.

3 chunks of kiwi (cut a kiwi into 8ths)
3/4 Oz Freshly squeezed lime juice
3/4 Oz Licor 43
1/2 Oz Simple syrup (1/1)
1.5 Oz Gin (preferably London Dry style, but give whatever you have a try!)
1 egg white

Begin by thoroughly muddling the kiwi. Once it is puréed, add the other ingredients to the tin. Preform a reverse dry shake, and fine strain into a coupe. Garnish with a dried kiwi wheel on top and enjoy!

Mocktail Edit:

3 chunks of kiwi

3/4 oz vanilla syrup

1/2 oz Freshly squeezed lime juice

3 oz ginger tea

3 dashes foaming bitters

Repeat the above instructions.
