Pimento Spritzer

• 1/2 lemon, muddled

• 1/2 oz 1-1 honey syrup

• 1/2 oz Pimento Dram (Hamilton’s)

• 2 oz Plantation 3 Star Rum

• 10 drops saline (20% salt solution), or a pinch of salt

• soda water

• Angostura Bitters

Instructions:

1. Combine Ingredients: In a highball glass, muddle the lemon pieces, then add the honey syrup, pimento dram, rum, saline, and ice.

2. Stir: stir until the mixture is cold on the outside of the glass.

3. Top Up: Add about 2 oz of soda water to the top.

4. Garnish: Garnish with a few dashes of Angosutra bitters, a sprig of rosemary, and a lemon wheel.
