The Almond Paloma

A bright and complex highball with layers of citrus, spice, and nuttiness, the Almond Paloma balances the crisp acidity of grapefruit and lime with the warmth of toasted almond and ginger. Tequila provides a smooth yet vibrant backbone, while a splash of soda water adds a refreshing effervescence. The final touch—a fragrant bouquet of grapefruit, mint, and lime—makes every sip a delight for the senses.

  • 2 oz tequila

  • ¾ oz Liber & Co. grapefruit cordial

  • ¾ oz freshly squeezed lime juice

  • 1 barspoon Liber & C0. ginger syrup

  • 2 dashes Fee Brothers toasted almond bitters

  • Soda water (to top)

Instructions:

  1. Add tequila, grapefruit cordial, lime juice, ginger syrup, and toasted almond bitters to a shaker.

  2. Fill the shaker with ice and shake until well-chilled.

  3. Double strain into a highball glass.

  4. Fill the glass with fresh ice and top with soda water.

  5. Express a grapefruit peel over the drink, then garnish with the peel, a lime wheel, and a mint sprig.

  6. Add a straw and serve immediately.
